I made Calypso PA a while back. Came out nice, nothing special though in my mind, it had the subtle pear notes that people describe, but I wouldn't classify it as a classic PA. I have that on tap now along with a brown mild. Both are good alone, but the other night I decided to blend for a black and tan, and was surprised how well they worked together. I like them mixed better than alone. The calypso hops seem to work very well with the lighter roasty mild ale. I have some Calypso left over so they are now ear marked for use in my next mild. Has anyone out there used Calypso in a brown or mild?
Sometimes two beers mixed together (e.g., Black & Tan) just go well together. It sounds like you ‘discovered’ a good mix in your Pale Ale & Mild. Lew Bryson is a beer writer who discovered that Lancaster Strawberry Wheat and Lancaster Milk Stout go well together. I tried this once and it was indeed a tasty blend. “Which means that sometimes I do offer them -- and men! -- a Chocolate-Covered Strawberry. Because I find this mix of Lancaster Brewing's Milk Stout and Strawberry Wheat to be pretty damned good myself...even if it is made from a fruit beer and a chocolatey beer. Sometimes you just can't fight success.” Cheers!
I used a small amount to dry hop a saison i brewed and i thought it complemented the beer very nicely.... I would use them again
Calypso does very well in a saison. I find a peach/apricot note in addition to the pear and apple skin flavors that goes well in English ales if kept discreet. I was convinced to buy some by the great Calypso Double Red at the Bobcat in Bristol, VT and am pretty happy with it, though it's certainly not a typical IPA hop. Just dry hopped a rye pale ale with it 3 days ago, so I'll know more soon.
I have seen a lot of people using amarillo in saisons, i really want to try that out myself as i have heard great things
