I've got brewing fever!!!! I'm about half way done drinking my first batch of beer. A friend and I made a saison with orange blossom honey. It's awesome!!! We are also in the process of making a batch of vanilla porter. I'm torn on what to make next. Does anyone have any go-to recipes that they think are lights out that they could suggest? I'm open to almost anything. I was kind of toying with the idea of making a chocolate peanut butter stout or trying a maple and brown sugar stout. Thanks for any suggestions. Adam
Some of the best beers I've ever made aren't bourbon chocolate maple nut-crunch beers. They're pretty simple. I like Kolsch and Irish dry stouts the most. Both take about 4 ingredients and 6 weeks, and then I'm in heaven.

I might brew a porter, so I had something dark and malty to drink while I passed off the vanilla porter to my best friends. I have tried several porters with vanilla and have not enjoyed any of them.
Cira pale ale... brewing this for the third time with modifications to the hop schedule 6lbs pale lme 1lb munich 1lb vienna 2lb crystal 20 Mash grains at 155 for 1hr (can't wait to have the tools to go all grain) .75oz magnum @60 .5oz citra @ 15 .5oz citra @ flameout 1oz citra dryhop in secondary for 7 days 1.060 og, 1.009fg with wyeast 1056 My new batch has 1oz cascade @60 1oz cascade and citra @ 10 1oz cascade and citra @ flameout 1oz cascade and citra dryhop. Haven't finished this one, so I can't attest to the flavors, but the first recipe is quick, easy, and tasty as hell.
