I've never been a fan of fresh saisons. Does aging improve taste with this style? In your experience??

They age fine. I personally think the only Saison that vastly improves is Saison Brett from boulevard, but they have all been good with a year or so on them. Give it a shot you won't know if you like it until you try it.

Saisons with Brett are AWESOME aged. Some saisons - less so. I wouldn't age Hennepin, Brooklyn Sorachi Ace, or Noble Rot (pseudo-saison?) for instance. Didn't love the results IMO

Sorachi Ace at two years is quite damn tasty.
