I'n curious if anyone has been putting bottles from Scratch away?
When they post a description of their beers at the time of reservation, they almost always mention that the beer will develop for several years with proper cellaring, but I have yet to actually try anything older than 6 months.
I have everything they've barrel-aged in my cellar, but I'm really interested in hearing about some of their sour or herb/flower/single-tree beers with some age on them.

I can't afford to buy most of their beers and try them fresh, much less extra to age. If I was loaded, I would try it. But I have been curious about the same thing. Additives usually diminish over time, so I'm not sure they would be better, but it would be a great experiment.
