Really appreciate that.. Do you feel the oats and the wheat will leave enough food for a good year long aging of the brett and bacteria?

Anyways- Thanks for the info there. I will certainly put it to use next week. 3 day weekend- plan to fire out some sours.

I've had good luck with the recipe. I do turbid mash a lot of my more lambic-like sours, but the last batch of this I did came out very nice. Here's a pic of today's batch going into the fermenter btw:

Double brew day. Made the Urban Chestnut Hopfen clone from Stan’s Hops book which is a "bavarian ipa" lots of hallertau hops used. Also made a Saison - 1.046, 3711 yeast, a healthy dose of styrian, EKG, and Saaz, and will dry hop with some EKG and Saaz. Both are fermenting away on the cool side (low 60s).

Today I had to cover for a cook that called the female expediter a c*nt. Nothing like the restaurant industry.

Brewed my chouffe clone yesterday and tested another brew for bottling this wednesday. It's a tripel karmeliet clone done with 1388. still 14 points too high after almost 4 weeks. I hate it when it does that.
