Recently, I had a couple of BA coffee stouts that were 2+ years old. Both had developed a green pepper flavor. It wasn't good. Why does this happen? Is it because of the coffee going bad?

I am not sure why it happens but I have also tasted this green pepper taste in different coffee beers over the years. Like you said it seems to "develop". The ones I had were good fresh but after a few months or years the green pepper flavor showed.

Have you tried turning the M to a W for "Wumbo?"

I don't like green pepper/veggie flavors in my beer, but as far as stouts go I can only remember detecting those flavors the chile pepper infused types (the green pepper/veggie flavor is the main reason I dislike most chile-infused beers). However I do detect green pepper/veggie in some hop-forward beers from time to time. The most memorable for me was Long Trail Smash #1, a pilsner with Galaxy hops (I did not like).

I definitely get green pepper flavor from coffee stouts on occasion. Based on group tastings, I believe that I am quite a bit more sensitive to this than most other people. Earlier this year, I had the last two Jack's Abby Framinghammer Coffee releases and both were extremely green pepper, even the brand new one that just came out. I'm not an expert, but I think it occurs when the coffee is over extracted (although I did have a coffee mead once that I was told was excellent, but a little age seemed to turn it pure green pepper). Some breweries get it right, some don't. I've never had a green pepper KBS, for example.

This is why coffee beers should be enjoyed fresh.

I get that sometimes from aged coffee stouts. For some reason the coffee changes into a peppery taste.

Thats a flavor from the coffee. It can be from coffee that wasn't roasted well and thus just tastes bad in the beer or coffee that has started to fall off in the beer. You actually can get that green pepper flavor when tasting coffees depending on the beans or roast.

I'm assuming you mean green bell pepper? A lot of peppers are green. Please specify. Green bell peppers are quite flavorless to me, but if I have ever tasted that it has been in really shitty adjunct lagers such as Genny Light. I used to think it was a grape-like flavor but green bell pepper is more like it.

Yes. I got TONS of peppery flavors from sixpoint CREAM. I actually just assumed it was brewed with some time of mild pepper. Was it not? Either way, it was one of the best beers I've tried this year.

I get green pepper notes from a lot Noble-hopped beers, especially pilsners, but never coffee beers. I'm not sure what the issue is.

My FBS collection has aged well with no problem. Must be how the coffee is prepared or handled as FBarber says.

One of the beers I have tasted the green pepper flavor in years ago was a few bottles from the end of a case of FBS.
