Anyone here tried a ZD clone?

    Thanks Steve and Jack.

    I think I'll be picking up one of those larger ale pails later this week then. Looking at the link near the top of the thread there is a recipe, it appears that it's a 6 gallon AG on top and a 5 gallon extract recipe on the bottom. Am I reading that correctly or should I just try for a 6 gallon extract with that bottom recipe.

    Thanks again, I feel like I'm being super obnoxious with all my questions but I don't have anyone to really ask in RL.

    It appears that the HBT thread has 94 pages to it. Is there a specific recipe that you are considering? If so, perhaps you could cut & paste it for BAs to comment to it.

    The general idea of batch size was addressed pretty well by JebediahScooter in an above post. The idea is to have a bit more than 5 gallons in your primary so that when you bottle (or keg) you will have about 5 gallons of beer (there will be some ‘losses’ due to trub/hop mass). I have an IPA in my bucket right now and it is at about 5.5 gallons of volume.

    Good call on the larger bucket. Another thing that I don't believe has been mentioned is a bucket makes dry-hopping a helluva lot easier. My first couple of batches, I D-H'd in a carboy in hop sacks, and NEVER AGAIN. The hops swell up and make it nearly impossible to get the bag out of the neck of the carboy. Miserable. If you do use a carboy, just put the hops straight in without the bag.

    It is true that if you dry hop in a carboy and use muslin hop sacks it is indeed a bitch to get those bags out. While it I easier to just dump the hops into the carboy without a bag, if you use pellet hops there is a risk of clogging your racking cane with hop pellet debris. Some folks use a paint strainer bag over their racking cane to mitigate the clogging.

    Another positive for dry hopping in a bucket: just drop the hop bag in the bucket and no worries about clogging the racking cane.

    I dry hopp with pellets only in my carboy for this very reason.

    Here ya go. Cheers. AG on top. Extract on the bottom, AG appears to be 6 gallon but extract appears to be 5 gallon. From the sounds of it though while I'm going to be doing an extract brew I'd prefer to get it to 6 gallons as it's been pointed out I'll lose quite a bit of volume from the dry hopping.

    **For the first batch with this recipe, I split it and used the 2 different yeasts (S-04 and S-05). The S-04 was closer to the real Zombie Dust. The S-04 is fruitier, and had a bit higher FG (1.018 ) that the S-05 (dryer, more bitterness). I have also used 1968 and it was similar to the S-04, perhaps a bit fruitier and it was sweeter/higher FG. If using it I would recommend mashing a few degrees cooler. That said, I would recommend S-04 or 1968 at this time.

    Here is the extract conversion for anyone interested:

    6.00 lb Extra Light Dry Extract (3.0 SRM) Dry Extract 70.6 %

    Steep the grains at in the mid 150s for 45-60 minutes. It is assuming a 5 gallon[​IMG] batch, 3 gallon - 60 minute boil, and adding the extract at the beginning. If you can do a full boil you probably wouldn't need the extra oz at 60minutes.

    I've read that when dry hopping with pellets that the hops are quite buoyant so some recommend putting a few glass marbles into the bag as to keep it submerged?

    Short answer: the extract recipe is for a 5 gallon batch.

    Longer answer: JebediahScooter stated: “There's a looong thread on HBT with a bunch of people starting with some guy's stab at it, brewing it, making revisions, reporting back, etc. I think that they think that they're pretty close.” My interpretation of that statement is that on the 94 page discussion other recipes (or tweaks to that recipe) were discussed. Is there a ‘better’ 5 gallon extract recipe on pg. 76 of the HBT thread?

    When I dry hop in my bucket I boil the muslin bag and a bunch of marbles to sanitize them. I then add the pellet hops to the muslin bag with the marbles and I ‘plop’ it into the beer in the bucket. Typical contact times for dry hopping: 7-14 days. I personally dry hop for 14 days.

    The one on the first page is the updated recipes with changes incorporated from all of the posts in the thread. I saw 94 pages and was about to say the hell with it, but then noticed the asterisk/notes on the first page recipe.

    EDIT. Looking at the recipe, that clone needs a diacetyl rest... 62-64 F with 1968 on a decent sized beer.

    Do you remember how long you let it sit in primary and when/how long did you dry-hop for? Did you cold crash it?

    12 days in the primary, then 6 days with dry hop (directly into the primary with pellets).

    Thanks Peter. After the 6 days dry hopping did you then bottle or let it sit for a few days? Do you guys recommend using something like IM during the last 20 minutes of the boil or is that kind of pointless since you'll be dry hopping etc?

    0 min hops steeped for 30 mins @ 180 degrees
    Two weeks in primary, dry hop in primary and in keg.

    Fermenting temp on this recipe calls for 62-64. Unfortunately my basement is now at 68....should I attempt a swamp cooler to ensure that it gets down in the 62-64 range? I was told that for the most part it's only important to keep it in that 62-64 range for the first 72 hours or so while the yeast is most active.

    Thoughts?

    Yes keep it cool. 68 ambient will get as high as 72-73 once fermentation started chugging away.
