APA and roasted malts for color

    I am putting together a recipe for an APA and instead of subbing out some base malt for a darker base, for instance going half pale malt half munich, I am thinking of just adding a couple of oz of pale chocolate or chocolate wheat for color. Has anyone done this, and how did it compare in flavor to your other beers with a similar hop profile but more traditional malt bill?

    My daughter brought me back this beer from Arkansas: Paleo Ale. It had an interesting malt bill (Pale, Pilsen, Munich, Wheat, Caramel & Chocolate). It was a very good looking beer but I think the beer was out of whack, if you are going to the effort of crafting that malt bill it should shine thru more than it did. I don't mind APA/IPA that have more of a malt presence, and actually wished this one would have

    You can try an ounce or two of Roasted Barley. One once will get you a dark brown two will get you a pretty deep red. All without any flavor from the RB.

    I have put it in the mash and cold steeped overnight tossing it in at sparge with equal results.

    I have done this with Midnight wheat. Added it in with the batch sparge water for a color addition. Sparged immediately after it was incorporated. To my surprise I Still picked up a very slight roast flavor in a black IPA.

    I didn't mind the slight roast in my Black IPA, but is sounds like you are going for color only. I'd stay clear of Midnight Wheat.

    +1 on cold steeping. You will avoid the potential acrid flavors. You will get the color along with a smooth slight roast.

    I use Blackprinz during sparge, but pretty much any de-husked dark roast will do.

    I am hitting 7 on my APA, but have decided to do a red ipa forHalloween and use some roasted barley to sparge.

    Try 1 oz of chocolate 350 the last 10 mins of the mash, it will be useful to add a pinch of color and to absorb tannins.
