    Cracking open a Stone Old Guardian from 2009.

    Forced the head just a little with a "bible belt" reckless pour (which is to say I didn't allow myself too much fun...). Very murky, brownish red and slippery lace curtains round out the appearance.

    Nose is vibrant, as it's hitting me from about two feet. Leaning in closer I can smell fig and maybe a little something more berry like. Wrapped around it all is a little heat.

    Taste is smacking me around a bit. Initially there's sweetness. Sugary and then molasses sweetness until strong bitterness in the form of, well I don't know. It's almost citrusy, sacharin sweet (yes, the bitter) and brown sugar. Heat really isn't a factor until finish, where the dryness on exit suggests high abv.

    Of all the aged beers I've opened and have in the cellar, this is one thing that's never occurred to me. Is this common? Should I make an effort to give it a shot with certain beers (like those you specifically mentioned)?

    I would give it a shot. I really like Sucaba on day two. I've been doing it for several years now and have yet to be disappointed.

    A buddy opened a Backyard Rye about a month ago and said it was falling off, better drink yours now. Opened it about 2 weeks ago and it could not have been more perfect! Smooth and Jammy. Drink it now, not because it's dropping in quality but because it couldn't possibly get any better!
