Are Nelson too unapproachable for your average joe?

    So I have a friend of the family coming over on Sunday to brew the second of two batches that I'm doing for his wedding in about 6 weeks. I did a pecan brown based on an Olde Hickory beer that he dug, and now I think we're doing a pale with mild bitterness and a lot of late additions, 5% range. I have a pound of Nelson Sauvin in the freezer, and I've been itching to use them. My two Nelson beers last year were lights out I thought, and my beer friends enjoyed one of them in particular a great deal. That said, do you think your average wedding-goer without a palate conditioned to aggressively-hoppy beers would find Nelson too dominant a flavor to knock back while shit-kicking to a bluegrass band in the NC mountains on a crisp October evening?

    I want to brew with Nelson, and I also want to do what's best for my buddy in terms of pleasing guests, but I think my own preferences are clouding my judgement. Should I go for something a little more subtle than a hopbursted APA with dry hops floating in the keg?

    Do you know if there is many beer fans going to the wedding? If a far amount I would beer a hop forward beer if not just a basic pale ale with it.

    That's the thing, I know the family somewhat through my in-laws but none of the guy's friends otherwise. He's a beer fan and approached me about brewing for his wedding after he had two of my beers at my sis-in-law's wedding this past spring. Thinking of that, one of the beers I did was a Gumballhead inspired American wheat with a lot of Amarillo and some Citra. It went over well, but it's just the wrong sort of beer for October in the mountains.

    Nelson in moderation, with Amarillo and Citra taking the forefront = unique enough to pique interest of beer geeks, but not too catty/dank/grapey to be a turn off to the masses (Did a pale, wheatwine and IPA with that group of hops for a couple big parties and all were very well received).

    This was a thought that I had, as I have Amarillo and Citra on hand. Was thinking 2:1:1 Nelson: Amarillo: Citra, though. I sort of feel like Nelson is so unique and wonderful, I want it to be the feature hop if I'm going to brew with it at all. This was what I was toying with:

    Magnum @ 60
    .5 oz Nelson, .25 oz each Amarillo & Citra @ 15, 5, 0
    1-2 oz blend of the three dry hop in the keg cold for 2 weeks ahead of the wedding

    Haven't toyed with the IBUs in BeerSmith, but I would adjust to land in the 40ibu range.

    Edit: the above hop schedule with .5 oz Magnum @ 60 gets me to 41.7 ibu in BeerSmith.

    I've brewed for several weddings/not typical beer events and in my experience, whatever is brewed goes over well. Regardless of style. People these days are open to try new things, whether it's an Imperial IPA or or a honey wheat. If its good beer, it will do well.

    exact same thought i have. nelson on its own or in excess can get catty / moldy, but in conjunction with amarillo and citra i don't think anyone would be offended by those nice cantaloupe / pineapple / pungent notes that nelson brings. the problem is when it goes nuts and turns the beer to cheese... which is a problem for seasoned beer vets just as much as "novice palates," honestly (cf summit and its "onion flavor" and how awesome summit and/or summit dry hops can work in conjunction with other hops).

    Yeah, that's my thought. I was worried with how hoppy the American Wheat that I do is, but wedding-goers have crushed 15 gallons over two parties that I've brewed it for. It's not really bitter, but it has a ton of amarillo and citra late-boil, and I've been pumped to see non-beery folks getting into the super hoppy aroma of that one. I'd brew it again in a heartbeat for a wedding save for the fact that the groom requested no wheat and that it just seems more like a spring/summer beer to me.

    In my limited experience with Nelson, I've gone big without cheesy/moldy problems. One of my favorite beers had 6.5oz of Nelson plus 1.5oz of Galaxy in the dry-hop. I was worried about those flavors at first, and they were present coming out of the dry-hop, but they mellowed out into something really glorious pretty quickly. The other one that I did was 50/50 Nelson and Galaxy, and I would do that again in a heartbeat if I had Galaxy on hand. I think it still featured Nelson prominently enough to make it worth using (again, my feeling is that it's hard to get, unique, and pricey, so why use it if it's not going to be in the forefront?), but it was definitely less aggressive. This is why I'm thinking the 2:1:1 Nelson : Amarillo : Citra mix, because I do fear getting into cheesy territory when brewing for a mixed crowd. Just because I've had success with huge amounts of NS as the only hop in the boil once doesn't mean that another batch can't turn out tasting like there were flameout additions of mushrooms and cheddar. So yes, I would have a much more light touch with the hops.

    I like the 2:1:1 mix. 40 IBU seems like right about the sweet spot on bitterness for an aggressively hopped APA (XPA). I just did my second APA, hopped with Falconer's Flight (Horrible, generic hop btw)/Pacifica/Amarillo/Citra APA (~2:2:1:0.2) with similar characteristics to your's and ended up netting my first best in show, and the beer's been a big crowd pleaser.

    RE your Nelson/Galaxy Beer, one of the things I've been anecdotally seeing in my hoppy beers is that the final dry hop (I have been double and tripling up lately) tends to be the most prominent hop flavor & aroma in the beer with everything else providing the subtle, more nuanced hop flavors (hope this doesn't sound pretentious)... seems to be especially true with Citra & Galaxy since they're so over the top flavorful.

    Just curious, been meaning to do a Summit SMaSH, as I've never used it in a beer; would you advocate staying away from said idea, using it in conjunction with some other hops and just picking up some Gubna instead to test out how it works in isolation?

    I'm thinking most of it would go over well enough, especially if there are options.

    I brewed a nice 7.5% Simcoe/Amarillo/Citra IPA the other week, for my brothers wedding later this month. It's not high on the IBU's roughly 60-70-ish I think from the calculations, and it's really balanced. I think people would try it, and drink it and actually be open to it.

    If not, I brewed a sweet orange blonde for the BMC people. It's like 23/25 IBU's, sweet enough to balance it out, crisp and clean, and has a lower ABV for people to pound back.

    People will try stuff, especially at a wedding, and especially if it's free for them. Worst case, they dump it, or pass it to someone who's killin' it. I wouldn't make a big beer, or some 110 IBU, danky hop bomb for the masses, like wise I wouldn't make some huge roasted, bitter espresso roasty russian stout to expect people to knock back.

    I'd be weary of it. Summit is an onion bomb. It's good blended in, but I like onion, but doubt I'd like a summit smash beer. Onion bomb, and tears would ensue. :wink:

    i'd try a gubna first, since a lot of people find it repellent. myself, i've used summit in conjunction with other hops and really like it, but never tried it in single hop. i really don't know how "universally onion expressive" it is.

    Thanks guys. I'll be picking up some GUBNA and most likely use Summit with some other hops that I know what to expect from.

    I brewed a single hopped wheat a-la gumballhead with all summit, both bittering and dry hopped. I got a ton of tangerine citrus, no onion or garlic whatsoever. Maybe I got lucky, but I really like what I got from them.

    To the OP, I am having the same dilemma as I am brewing for my own wedding in November. My pale ale recipe stays similar but I try different hop bills every time. I recently did a Nelson/Galaxy and it is ridiculous, most non craft drinkers seem to like it, but for family to drink all night I am going to go with more approachable hops, Cascade and Ahtanum. If you have Nelson try some type of blend, but I would personally suggest not to overdo it. My biggest fear is cleaning up 50 glasses of pale ale with 1 sip taken out of them at the end of the night.

    I'm thinking that this will be a nice balance between putting Nelson in the forefront and preventing him from becoming overpowering, as I too fear the 3/4 full cups sitting around afterwards That said, I've gained a little more faith in the beer-drinking-wedding-going public after a couple of aggressively late-hopped wedding brews went over really well.
