Never cold enough. Can't stand warm/hot drinks (coffee, hot chocolate, etc.). I don't mind my stouts/barleywines to get up to room temp as I'm drinking them, but never open any beer at "cellar" temp. Always straight out of the fridge. Everything is personal preference
I used to pull out my beer from the fridge 20 minutes before drinking it, and I realized that the flavors don't come at first, and as the beer warms up later, it's better. So maybe I should get it for more than 20 minutes at room temperature.
I think the only beer I’m super concerned about is ipas. I drink bourbon also and the colder bourbon is the harsher it tastes and covers up the flavors. So I drink that at room temp. I treat my beers somewhat like that and I do notice as some get warmer the more subtle and complex they get.
