My friend gave me his family's recipe, which calls for beer (and chicken broth) in the final mixture of rice, chicken, etc. He suggested "something like Dos Equis." I have some Molson XXX in the fridge -- do you think this should work? They're not the same exact style, so I wasn't sure.
That would work, anything with corn and not much else. The XXX is sweeter and more potent though so you would use less.
