    Interesting article by a local magazine about aging beer with a little scientific explanation sprinkled in. I thought it helps answer some of the common questions we see in the cellar subforum.

    Meh, this guy seems like he is just complaining or ranting. Although I agree with his point to know "What are the flavors you hope to gain from letting the beer age rather than drinking it fresh?". Some people may just age beer to age it but not know what changes will take place. I think this guys problem is that he doesn't know what is in his cellar. Keep track of that shit and know when to drink what and aging can do wonders - for the right beer.

    I think he makes a good point that a lot of people dont understand what is going on in their beer when they age it and what they expect to get out of the process. True he admits that he doesnt know what is in his cellar, but a lot of people who do know what they have, dont know why they have it.

    You see a lot of people post pictures of their cellar with IPAs in them, and when people call them out, they say "oh Im planning on drinking that one soon," etc. when it never should have gone anywhere but in the fridge. That is the most basic example, but there are plenty more.
