atrial rubicite clone

    I'm sure there is batch-to-batch variation for most sour producers depending on flavor and how quickly the bugs ferment out the sugars. I reported what the most recent batches were when I talked to Ron.

    For me raspberries beers get "seedy" if they stay on the fruit too long (which happened a little after five months to with my Atrial Rubicite loosely inspired sour brown). Most other fruit beers just tend to start fading if left on the fruit too long. Getting them off the fruit sooner means you can be drinking it when the fruit character is fresher.

    I've been considering trying to make some 100% fruit wines that can be blended into the finished beer to taste at packaging. Maybe this summer once things are in season.

    It turned out pretty goddamn fantastic, lol. Super delicious shit. Probably my favorite fruited sour so far.

    A fun variation on this is to add Cabernet grapes along with the Raspberry.
