Attenuation with Dupont Dregs vs 3724?

    Has anyone used yeast cultured from Sasion Dupont dregs and Wyeast 3724 in similar beers? I'm curious if you saw any difference in apparent attenuation between the two. TIA!

    I'm a big DuPont re-yeast'er. Have never used 3724, so not really able to compare the two. But, the last five times I used DuPont dregs (normally a four step re-start), my FG's were 1.000(3), 1.002, 1.005(?). Typically these are mid-1.050 Saisons mashed around 152. Ferm temps are influenced by Glenn Frey/Don Henley (Life in the Fast Lane*) . . . start at 77 and raise it one degree a day until 85. Final Gravity is usually reached by day 10 and I let it condition for another week in the low-80s. These beers hold up well in competition.

    I have used 3724 and Dupont dregs in things like 100% Pils malt with an OG of 1045. From a mouthfeel point of view, I have not noticed a difference between the two. But, I haven't used 3724 in quite a while and I was never taking FG readings then.

    Like @PortLargo I have seen pretty low FGs with dregs. A recent saison was 8# Bo Pils and 1# 6L Munich (OG = 1046). I pitched at 68 let rise to 75 and the gravity was 1003 a week later.

    I'm planning a Saison Dupont clone using cultured dregs and am trying to establish expectations.
