    Here is a Belgian specialty ale with Kyoto cherry blossom tea we brewed last month...Finally carbonated and ready to taste.... It was an experimental beer with adding the tea....Turned out amazing...This will be end of August/September drinking....

    Next up will be a simple pale ale with fresh Chinook hops I picked at a family members....

    Second step of Kellerweis dregs is currently stirring on my stir plate. Hoping I can create a successful clone, after tasting the original beer, and the one having @jbakajust1 made which is so tasty! Brewday is Tuesday--hoping the yeast will cooperate and I will be able to step it up once more before then.

    Throwing together an extract APA to get the few hops I got this year into a beer. Been having a hard time getting into my brewing lately, still wrestling with insurance companies over hail damage...

    Purchased 2lb of 2016 Harvest Australian Galaxy and 1/2lb of Vic Secret today! Finally got my hands on some Galaxy... Will be using that up in some awesome IPA's in the next few months.

    Did my first closed transfer last night. I had a couple hick-ups such as not extending the racking cane far enough, and sucking in air. And the carboy slipping when I angled it. Time will tell if it get oxidized. Nice first attempt though.

    What grain bill/hop schedule are you doing? I've been wanting to try a kellerweiss clone for a while now but have had a hard time finding a tried and true recipe for it. (Other than the yeast obviously) You probably already know this but SN does an open fermentation with Kellerweiss so if you put some sanitized foil over the fermenter you can mimic an 'open fermentation' in your brew house. Hope it goes well!

    Earlier today: Brewing an all-German IPA (except the water) for RCGF people's choice. Weyermann Pils, touch of German wheat, some Carabelge, Südzucker Weisser Kandis (sugar), and a big pitch of 3333. Hops are Merkur, Hallertau mittlefruh, and German tradition. Brewed using NEIPA water profile and hop schedule.

    Did a 3 hour boil Quad to see the inside of a Bourbon Barrel after a100% 3 Brett primary. Also snagged 3# of Columbus of the bines that saw the whirlpool of a 7 gallon batch of IPA.

    One trick with that yeast is open fermenting. Use a hop sack with rubber band over the carboy opening to keep out fruit flies for the first few days then add an airlock after the krausen starts to drop.

    Bottled the pure yield of my smoked rosewater saison: 5 gallons, with (hopefully) a 2.6 vol for carbonation. I guess I still have an issue with a few microbes and some bacteria somewhere in my conical because a very thin pellicle had formed. So it goes. For a farmhouse/saison bier. Big whup.
    I set some cumin, salt, cacao nibs, vanilla bean, ancho, pasilla, and mulatto pepper on a soak with some blanco tequila for my holiday beer as well today.

    Brewed a Brown ale yesterday 1.050 OG
    Golden Promise, Munich 2, CaraMunich 3, English Medium Crystal and Pale Cholocale.
    Centennial to bitter and Centennial at Flameout.

    I have been looking forward to a Brown for a while and finally squeezed in a brewday yesterday.

    Kegged my mango ale and also kegged my wit. Added fresh pressed grapefruit juice and a dry hop of Amarillo and huell melon to the wit.

    Planned out my next beer (possibly the next two). For sure a Schwarzbier when we return from our vacation next week, then I am thinking of an IPL with primarily Golden Promise and Nelson and Galaxy hops. Still working on that second one though, the Schwarzbier is a finished recipe.

    This past weekend I...
    -Brewed a Hallertau Blac single hop IPA
    -Kegged a Rye IPA with Citra and Mosaic
    -Dry hopped a 007 single hop IPA
    -Kegged a Peach Sour
    & -Brewed a base sour recipe to add back onto the yeast/bug cake from the peach sour to keep that pipeline going

    I brewed an oatmeal stout yesterday, that's a beer I try to have on tap all the time, especially since my wife likes it now.
