Autumn Ale Extract Recipe

    I am trying to put together an Autumn Ale DME recipe I can order from a local HBS which is going through a rough patch. This would be something of a hybrid between SN Tumbler and a strong Southern English Brown ale. I put it through the brew calculator and it seems to fit okay.

    Batch: 1.25 gal
    Boil: 1.5 gal
    60 min boil


    DME:
    2lb Amber

    Steeping grain:
    2oz Caramalt
    1oz Chocolate
    1oz Cherry Smoked

    Hops: (Trying to keep it at only 1 type of hop)
    .5 oz Fuggle at 30min
    .5 oz Fuggle at 10min

    Yeast:
    US-05

    Per the calculator that comes out to ABV 7.36, IBU 36.11 SRM 17.26 OG 1.069 FG 1.013

    What do you think?

    [The wife may request maple syrup which would alter things a bit too.]

    No comments on the recipe, but can you boil for 60 minutes and only lose .25 gallons?

    I'd add bottled water to bring to level. Thats what all the kits have had me do
