    -> Poll #7 <- determined that Pale Chocolate Malt (English, ~220L) will advance, inseparably with one or more ingredients from "Other Cara/Crystal Malt(s)") to a future combo poll that will feature at least one ingredient from "Amber Malt and/or Brown Malt" and at least one ingredient from "Other Adjuncts." Poll #7 also determined that Chocolate Wheat Malt (Weyermann, ~400L) will not advance.

    This poll (and possibly the next) will determine what type(s) of Cara/Crystal Malt(s) advance to that combo poll, inseparably with Pale Chocolate Malt (English, ~220L).

    PLEASE READ THIS BEFORE VOTING! You need to understand it for the results to be valid. There are Two Concurrent Mini-Polls. Because there are only 10 slots available per poll, this poll is split into two concurrent mini-polls. You should vote in both polls, and you can select more than one variety per poll. At the end, I will combine the results to determine the top varieties for further (potential) whittling. Vote in both of the concurrent polls...if you don't want any of the malts in a particular mini-poll, you should vote 'None from this segment" in that mini-poll. If you want a C-Malt not listed, write it in.

    You can select more than one choice. The #1 overall choice (from both segments combined) will automatically advance to the combo poll. Beyond that, any other choices that get votes from at least 30% of respondents will advance to another poll to determine exact combinations that advance to the combo poll. Want something that's not listed? Write it in. If your first choice is losing badly, consider jumping to a similar choice that has more votes.

    I recommend you think about this in terms of not only your personal preferences, but also in the context of the ABV and Final Gravity (and thus the attenuation) already selected, base malt already selected, and fermentables still possible, as well as any possible yeast strain selection that might be kicking around in your head.

    I had to look up most of these having no experience with them.
    I’m going C40 and that’s it for the crystals.
    I used C40 and Pale Chocolate together recently to nice effect.
    If there’s a brown or amber malt coming in I don’t think we need more than that.

    GNO is a huskless oat crystal malt per Simpsons and in their words it, "is quite simply delicious". (I've not used it.)

    I went with GNO, medium and dark crystal before seeing everyone's votes. Really surprised to see all the votes for double roasted. Based on the number of votes, I'm ready to switch my vote, but I think this is a good place to discuss "vision" for this beer.

    In the last week, I have had a sixer of Ellie's Brown from Avery and right now I am drinking a Maduro from Cigar City. I like both, but the Ellie's comes across on the thin side. I want something bigger like the Maduro which specifically mentions flaxed oats on the can, there is also a "bigness" to the taste/mouthfeel even though it is a 5.5% beer.

    For our beer, I'd like to see a chocolately/roasty/dark or burnt sugar/caramel, not a porter, definitely not a big roasty stout, something "complex" but easy drinking and not a Newcastle Brown. Basically, I think I want the same thing that @minderbender described in the previous thread.

    So, will the double roasted caramel along with GNO and pale chocolate get us to my vision?

    Hopefully @MrOH or others who have used Simpsons DRC will jump back on and tell us if any/all of the description > here < is accurate. If it is it might get you closer.
    It claims a usage rate of up to 20%, and I get the impression too much of it could easily tip the balance away from an “everybody” beer, but the dark fruit character sounds good.

    I find it to have a lot of the flavors of Special B, just in different proportions: more dark caramel flavor, less raisin and burnt sugar, along with some other dark fruits.

    Just added the Double Roasted Crystal to my vote based on @MrOH's description and the link from @riptorn Sounds like it would go well with GNO and Pale Chocolate malt

    If a voter votes in only one of the polls, does that diminish (or make null) their other votes? Or does it throw other stuff out of kilter, too?

    New frontrunner is C60 followed by GNO and DRC. And the same question applies...
