    I think that since we are talking AMERICAN the wheat needs to be higher. Just my opinion.

    Generally 2:1 Chocolate to Pale Chocolate.

    My instincts tell me that if you roast wheat malt, the proteins that aid foam retention might change. I have no actual knowledge, but it is something I wondered about when I used a a pound or so of this malt, spread over several batches, mostly for coloring.

    Roasted Barley, Chocolate Malt, and Black Roasted Malt advance to a 'combination' poll that will determine the one, two, or three roasted grain(s) that will actually be in the recipe. That way, they can be considered IN CONTEXT with each other.
