    The next poll is going to be for yeast strain. If there is a strain that you would be disappointed were it not included in the poll, this is the place to mention it.

    I recently had Maudite. Would like to brew a dubbel with this strain but it is a wy-pc strain so am not sure when it is available. There are dry Belgian strains I never tried and would like to. Always wanted to use the Duvel strain in a dubbel - Duvel Dubbel. But I’m content to split the batch to pursue one of these options, as we will vote for Westmalle, overwhelmingly, and can probably invoke the mercy rule now.

    I think WY1762 should be in the poll, not sure I'd vote for it.

    Also noticed that WY3655PC is in stock

    I'm treating the different "equivalents" as NOT equivalent, because in my experience there certainly are some differences between companies, even if maybe they originally were sourced same or similar.

    When I was into making Belgians (years ago), the White Labs version of the Chimay strain was my favorite. As my LHBS no longer carries White Labs (I believe due to poor customer service), I'd like to see Wy 1214 as an option. Cheers!

    For me, it's always gonna be between chimay and westmalle for this style.

    I feel like I have read elsewhere that these dregs are a bottling yeast strain and not the fermentation strain.

    t58, i am a snob about trappist beers and have had good results. its also very affordable, in contrast to the grain bill of the recipe.

    Thanks for the suggestions. To keep the poll manageable, I'm going to keep generally accepted equivalents together. Ultimately, the brewer can decide which one to use anyway. Also, I'm inclined to leave out limited availability strains (PC, Vault, whatever).

    As much as I'd love to try out a strain from one of the smaller labs, or even a dry yeast, we all know its going to be Chimay or Westmalle from Wyeast or White Labs.

    I think this is the right call. Sort of consistent with the original IPA poll, where I think we omitted Amarillo hops because they just weren't available that year. It might have been interesting if we included it, because we could probably brew the outcome now. Maybe we need to revisit this classic and have a Buyer's Remorse poll? :grin:

    I know I subbed Amarillo for the Cascade in the APAIPA since I actually got some Amarillo that year. It was great!

    Only Belgian yeast I've ever used was Wyeast 3787 (the Westmalle strain, I believe), and I liked it. I would also vote for whatever strain New Belgium brewing uses for their Dubbel if I knew what that yeast was.
