    Recipe says WLP-510 but i'll go with anything.

    I think the Chimay or Westmalle strains will get the vote, BUT I would like to see T-58 in there. It’s a very tasty yeast and if you get the temp right it gives some very Belgiany flavors.

    I agree T58 is a fine yeast, BUT I don’t think it works in a dubbel. With T58 I get more of the spicy/fruity bubblegum Belgian characteristics. I think you want the dark fruit/ plum flavors for a dubbel, found in a yeast like say WLP500.

    Going to use T58 in a Belgian IPA in coming weeks. What temps were you getting bubblegum?

    I can tell you I DO NOT get bubblegum by pitching at 66 and letting it free rise to 74. I do get a nice classic Belgian spiciness that works well in a Golden strong.

    I have used it 2x before, in a mead fermented in a cellar < 60 deg and an extract wheat. The mead had no Belgian ale characteristics and the wheat was a bit hefe-like, probably fermented at mid 60s (same cellar, in the summer).

    I thought I read of others getting bubblegum at high temps. I never got it, but always kept in mid 60s. I used once in hoppy Belgian that worked nice. Ive co-pitched it with sour blends too, and worked good.
