    -> Poll #20 <- determined the timing of the hop additions. This poll will determine the IBU target. Note: The bittering model will be Tinseth. And because there is the potential for a big flameout/hopstand/whirlpool addition, the Northeast IPA project will break with Averagely Perfect tradition and use an extended Tinseth model, i.e. the flameout/hopstand/whirlpool addition will count in the IBU calculation. (I'll use BrewCipher's improved Tinseth model.) But because everyone has different capabilities/systems for performing hop stands and whirlpools, we'll model that addition as if it will be at 170F, for 15 minutes, which should be a decent middle of the road compromise for calculation purposes. (This is for calculation purposes only...the recipe won't actually specify the temp or length.) So keep this in mind while voting.

    I recommend you think about the IBU levels in terms of the bitterness of outstanding Northeast IPAs you may have tasted. If you haven't had any, I recommend paying attention to the discussion. If you want less than 46 IBUs or more than 73, write it in.

    When this poll is done, I will look at the data a few different ways to determine the central tendency. It may or may not be as simple as a plurality would indicate. There may or may not be a runoff. It all depends on the data.

    ABV: 6.5%
    OG: 1.062
    FG: 1.012
    Mash Temperature (recommended): 152F
    Mash Length (recommended): 60 minutes

    Grain Bill:
    North American 2-Row Brewer's Malt (77%)
    Wheat Malt (10%)
    Flaked Oats (10%)
    Honey Malt (3%)

    Hop Schedule:
    60 Minutes (variety/qty TBD)
    10 Minutes (Citra, Galaxy, and/or Mosaic, Qtys TBD)
    Flameout/Whirlpool/Hopstand (Citra, Galaxy, and/or Mosaic, Qtys TBD)
    Fermentation Dry Hop (Citra, Galaxy, and/or Mosaic, Qtys and Exact Timing TBD)
    Traditional Dry Hop (Citra, Galaxy, and/or Mosaic, Qtys TBD)

    Yeast Strain: Wyeast 1318

    I went with 61.... although i think you can actually "get away" with even higher IBU numbers if you dose your water accordingly. BIG CACL addition for sure.

    Still not voting since I have not tried this style before, but it seems like a BU:GU ratio = 1 would be reasonable here, especially given a lot (all?) of the IBUs will come from late additions. So, if I were voting, I would go for IBU = 61.

    I'm curious what others think about this reasoning.

    Yep. BU:GU = 1. I went 64. If this was an 8% beer, I could see going higher. At 6.5%, this puts it right in the middle of IPA style guidelines, not that I'm advocating being sticklers to style, but as a data point I think it's to be considered. I don't think you could go wrong in the 60s.

    I went with 70, thinking that most of the calculated IBUs would be from the late additions and would impart a "softer" bitterness, but this may be too much for a 6.5% beer. The diff between 64 and 70 is probably not detectable, though.

    Although I haven't voted in this AP recipe, it's starting to look pretty interesting to me. Nice job, voters.

    I went 64. Bitterness in these beers is less perceptible than in beers fermented with other yeasts... brewing to 64ibus calculated will net a perception significantly lower.

    I voted for 52 IBUs. While I agree the water composition will downplay the bitterness slightly, I still think 1:1 BU:IBU is too high for this style (or maybe higher than I prefer would be a better way to say it). I don't even prefer west coast IPAs in this gravity range to have a 1:1 ratio these days. Maybe 8% or above, but not 6.5%. YMMV.
