    I think the big thing with honey malt is that it doesn't take much to "do its thing". I feel as if a small addition of honey malt helps add a perception of sweetness to a beer that often tastes (and looks) like fruit juice. So adding 2-5% of honey malt doesn't add a lot of color to the beer, but does IMO impact the finished product. Maybe a small addition of carpils or c20 would basically do the same thing, but I have never tried it.

    If you take these hazy beers past 6 or 7 Srm you tread dangerously close to being too dark, maybe because of the haze?

    I have done mostly pale malt and oats in a lot of these "NE" inspired beers, and that works awesome also.

    Wheat would be a welcomed addition as well.

    I'm truly excited to see what we end up with here in the end.
