    One thing I'd like to mention in my dubbel. I was dubious about using the home made invert sugar as opposed to Belgian syrup. And I was not as pleased with the flavor. The beer turned out great but the invert definitely adds a different flavor than the Belgian syrups you can buy. I like a touch of a sweet candi note in my dubbels, this one did not have it. In hind sight I might have been able to adjust a bit by decreasing the hops but live and learn. I plan to brew another batch of this over the winter using candi syrup just for comparison.

    I used the rest of my APESB invert in the Belgian blond I recently made. I’ve never had one of the Candi syrups in this color range (amber?). It would be interesting to compare
