Avocado Flavor Extraction

    im trying to brew a beer with an avocado flavor to it. ive tried mutiple ways of steaping avo into a tea to mix in, but am getting no such luck having anything other than gross bitterness. anyone have any experience or ideas?

    No idea... but then again I have never had anything avocado flavored but an actual avocado. Im curious as to why? Avocado is the last flavor I would want in a beer. Oil and water really dont mix .. seeing as how avocado is so fatty. Know what I mean?

    Interesting experiment. To me, avacados are all texture and little taste. Are you sure you don't just want a beer flavored with lime, salt, pepper and chilis?

    avocados seem to me to have a high oil content. extraction of the oil would probably be the first thing I would try. if I wanted avocado oil in my beer. press the avocado under extreme pressure. not to make a paste but to extract the oil.

    you might get good results, or at least some flavor, if you soak avocado in vodka. alcohol extraction.

    thats exactly what im going for. all the other flavors are easy, the avo is where im finding trouble.

    The flavor of avocado is fat, which is something that will be difficult if not impossible to capture in a beer.

    Drewbage: Avacado honey is a great idea. I've found it has a very strong and balanced honey flavor.

    OT: It may be best to replicate the avacado flavor without using avacado. Think pumpkin beers that use butternut squash in the mash but no pumpkin.

    The only times I've felt that oiliness in a beer was in heavily wethopped ipas. I don't think that's what you're going for.

    my only other idea that i have found that is anywhere close to being replicate of the "fattiness" flavor is i made a tincture with raw pistachio meat. pistachio has fat thats in the same family as avocado fats. it only tasted like pistachio if someone told you it was pistachio, if they said it was avocado, it is passable. but ive thought of doing both avo honey and pistachios in the mix.

    was the avocado flavor from the honey strong enough to be noticable?

    It was interesting and had avocado notes from the honey. Tasted at the Falcon's booth at the San Diego NHC 2011. Drew was Mr. saison at that one.

    yea that fat washing looks like a good way of going about it. im actually taking the same tincture method from the recipe up there and gonna add avos int it and see how it comes out. ill be brewing on tuesday but wont be puttn the tincture in until kegging in a couple weeks
