back to brewing, quick yeast question

    i picked up brewing again after a few year hiatus due to having two children. Anyways I’m making an old recipe with a big 20 pound grain bill. Russian stout. I never made a starter. I have a smack pack. Would it be ok to just add this one today and then I can grab another tomorrow on my way home from work and then pitch then? Or should I take my lazy ass 15 miles across town and get another today? Thanks

    For a big RIS two Wyeast smack packs is likely not enough; I'd guess that 4 would get you in the ball park. Even with two packs you should really do a starter.

    A more economical no-starter route would be to use a sufficient amount of dry yeast (properly rehydrated).

    Personally, I'd make it Nottingham . Use 2 packs, follow directions and hav fun.

    Just made an RIS Saturday. 1.12 O.G. Pitched one pack WLP002 and one pack Nottingham. Fermentation was going the next morning. I do not re-hydrate my dried yeast. Good luck!

    Good call. That yeast is a beast; I've never seen anything else quite like it, at least in terms of throwing a big krausen. I have ~2.5 gallons of headspace in my fermenter, and it is the only yeast to ever blow out the airlock.
