Is it because I use cheap ball lock fittings on my kegs or are stainless ball lock fittings equally annoying to disconnect. Thinking about upgrading but if the stainless ones aren't any better I won't bother. I've thought about using the food grade lubricant on the o rings. Getting annoyed with ball locks. Any experience would be super appreciated

The only time I've ever had a problem with my plastic ball lock fittings is when beer has splashed in them and dried. And yes that was a pain. I would suggest you disassemble them and soak in PBW to see if they improve, if you haven't already tried that. I wrote a post about this here.

If you ever connect the gas connect to the liquid post you'll have trouble ripping it off. Otherwise, SS has been friendly to me.

I put keg lube on the posts and o-rings and it helps a lot. Keg lube is a food grade silicone grease I got from my lhbs and a little bit goes a long way. The only time my quick connects got sticky was when beer leaked a couple drops when connecting then dried and acted like glue. At that point I disassembled them and soaked in hot water with Oxyclean Free and they were good as new.
