Having a barrel aged stout tasting coming up in a few weeks. I am looking for cheese and/or other food pairings to go with these beers. Thanks for the help!

Are you looking to offset some of the chocolate/sweet goodness of the stout? If so, remember to pick up a blue cheese or stilton (Rogue and Iowa Maytag are two of the best, IMO.) Anything that has a good, robust pungent flavor would be good (if you love pungent, look for "washed-rind.) Also, see if you can find some aged cheddar (if you can get some of Hook's 15 yr. cheddar, I highly recommend that.) You'll still get some of that tang of cheddar, but it's more of a mellow mouthful, not as harsh. The downside to both styles of cheese I recommended is that they are creamy enough that they'll coat the tongue (similarly to a stout.) Have some fresh baked sourdough or pumpernickel bread to go along with the cheese (you can find some par-baked bread in most stores nowadays.) Bake it yourself and it goes fantastically well with the stout and cheese. Maybe even add a few bottles of mineral water.
