Barrels- which do you like?

    I'm adding to my barrel collection.

    Don't have the ability, yet, to get wine barrels for my sours, but maybe soon..

    I am looking at adding a Rum Barrel, or a Brandy barrel.

    Mostly for doing stouts/porters/browns/scotch ales.. old ales, things like that in there. Mostly going to be stouts..

    I like Rum, so I'm leading towards that, perhaps even being able to "double barrel" beers. A run through the bourbon barrel, and then into the rum to finish.

    Anyone used both, or one or the other and have a preference?

    Have used one year Carib rum soaked cubes on a Dubbel-Brett beer that turned out fantastic. I like rum oak with dark Belgians.

    I know soaked cubes are not the same, but should give ya an idea.

    Between those two choices, I prefer Brandy, because I think it adds a nice fruity sweetness to beer. For most beers, i think brandy is a more complimentary flavor than Rum

    Rum is pretty mellow and sweet, at least the two I have are. Most of the commercial rum barrel aged beers I've had are along the same lines, lots of burnt sugar, not a lot of tannins.

    I'll tell you in 2 months how the brandy barrels are :wink:

    That was part of my reason for asking. Fresh emptied rum barrels, sound pretty nice to do a double barrel stout in, or perhaps a Quad or Tripel in there even.

    A local brewery did a really nice Tripel aged in rum barrels. It was pretty darn good. The burnt sugar sweetness and oak really rounded the beer out well.

    I might have to do something like that, and then age a stout in there. Will do my Rum barrel BCBS against my bourbon barrel BCBS, and maybe try a blend.

    Anyone that has used rum barrels, do you feel like they wear out faster than say a bourbon barrel? Looking forward to a 10 gallon barrel that will strip it's flavor a little quicker than a bourbon barrel so I can age some sours in there, and do a semi-quasi solara. Add 10, pull 5, add 5, pull 5.. see how it goes. I figure I could turn sours a little faster, and then bottle and age and see how they do solo.

    Edit to my above post. Why are you even wasting the money on a barrel? According to @JackHorzempa you can get just as good of results using oak cubes soaked in rum or brandy.

    Maybe if one were to go to said distillery, get a jar of their white whiskey or rum , ask them how long they age, find out what kind of oak they use and the conditions in which they age, then replicate that with cubes... then maybe, just maybe.

    Thinking of doing a split batch of a BCBS type beer, half on rum soaked cubes, half on bourbon but haven't come up with a satisfactory recipe. Do you mind sharing your recipe?

    Sure, give me a bit, and I'll import it from beersmith. I have another recipe someone was asking for I need to dig out that I'll get around too.

    I have a 15 gallon Rum barrel that I have used on multiple beers. I have done a stout, amber, and a porter in the barrel which all turned out fantastic (my favorite was the amber). I decided to enoculate the barrel with bugs and I currently have a wild brown ale fermeting in it. The sweet notes from the barrel/rum are really complimenting the beer. I too would love to expand into the Wine Barrels (even port) so I have blending options.

    I'd love to get a barrel but I can only pump out 5 gallon batches with my current setup.

    Hmmm, I am not sure you are stating that. In the other thread I stated:

    “So, my personal take way advice is the following:

    · You can indeed “get close” by using oak cubes and bourbon. I did exactly that with my batch of Bourbon Barrel Porter.

    · If you want the ultimate barrel aged beer buy a 55 gallon barrel which contains the specific spirit (or wine) that is appealing to you.

    No issue there, you can find 5 gallon spirit barrels. Rum, Brandy and Bourbon/Whiskey.

    I have a 5 gallon balcones barrel, and I'm picking up a 10 gallon rum. My next purchase is a 10 gallon whiskey barrel then I will have barrels for my sours to reside.
