Battle Priest Bottle Variation?

    First I've heard of anything "off" in Battle Priest, however I don't know of a lot of people that have cracked one yet. I have a bottle of Battle Priest, but I put it in my cellar and plan to let the Brett work for at least a year or so before cracking it.

    The beer is already 100% brett-fermented - it's going to have virtually no fermentables left. All that will happen is the hop flavors will dissipate. This isn't like Saison-Brett or Orval, where the brett is added at bottling. There's nothing left for the brett to do.

    Thanks for the feedback. From the little I've heard the hops are very prevalent, so perhaps the hop flavors dissipating a bit might not be a bad thing. In a casual conversation with someone from FFF recently, he felt being patient with this beer and cellaring for a year as I was planning would be rewarding. As with anything, everyone has their best predictions & opinions.

    I know the common belief is that if you only have one bottle of something you should drink it fresh. However, I've never totally subscribed to that if you're looking for particular charactersitics in the brew especially with beers that add brett at bottling (I realize this is not the case with Battle Priest).
