Beer and dessert

    Anybody have any wild or crazy beer inspired or beer infused desserts. I want to start cooking more with beer. And besides stouts paired with chocolate, I'm interested in unusual and delicious pairings!

    Stouts and chocolate is the easy way to go, but you can have a lot of fun pairing desserts and beer by being creative. Try something sweet and creamy like a panna cotta with an ale aged in red wine barrels. Mix and match sours with berry crisps and/or pies. Or find a fruity and slightly bready Pale Ale that plays well with your favorite carrot cake or spiced cake recipe.

    What fool would want to start cooking more with beer now that prices have risen? I'm kidding, but at the same time I'm also a little bit serious! I used to use beer for a lot of stuff but now that's out.

    However, I do have a suggestion for a beer that will add a good dose of chocolate and roastiness to say, a dense sweet cake that needs a little splash of something... Cigar City Jose Marti.

    Or, I used to make a fruit cocktail just by cutting up fresh fruit and dropping it into a wide mouthed wine glass half covered with sweet Belgian framboise (I forget which one was the sweetest, is it Lindemanns?).

    I also love the Blue Moon Cinnamon Horchata with some cream, sugar, and ice as a quick "frosty".

    Flan

    Beer dessert crepes (numerous Belgian brews!)

    All sorts of stuff!

    I've boiled stout down to a reduction and added it to a standard vanilla ice cream recipe... one of the best ice creams I've ever made/had

    I usually just have beer as dessert, but beer ice cream sounds amazing.

    Hi, You can try Long Island Iced tea with combination of ice cream. It taste very good as I tried this at one of the restaurants in the Hamptons. Just try it.

    I once reduced some Weyerbacher quad way down and put it into a cheesecake, which I later ate with more Weyerbacher quad. Very good.

    The general rule of thumb for pairing with dessert is that the beverage needs to be at least as sweet as the dessert. If it's not, the residual "sweet" in your mouth will make the beer taste thin and hollow. I love cheese for dessert and I'm a big fan of finding the perfect cheese to go with my favorite beers. Unfortunately beer and cheese are making me fat.

    I like sweet belgian beers (like carolus classic) with light sour cheese like gouda. Sweet and sour work.

    I just Gotta say big ups to @gyoungit this weekend for a share he made a killer beeramisu with BCBS. It was so fuckin good.

    Haha thanks @miggs3030 , I wasn't quite sure what to expect. Glad you guys enjoyed it. I love cooking with beer, I think that's easy. Desserts with beer is a bit more of a challenge

    One of my favorites (and company too) is FW Double DBA paired with pound cake, sliced strawberries, and whipped cream.

    Second the Beeramisu concept, or a nice cheese plate with a beer - based compote or jelly. In winter, I simmer dried fruit in old ale or something spicy and spoon over custard or ice cream.

    I like stouts that are a little sweet on there own paired with a dessert that's a little bland. Any ris with oatmeal cake is a great pairing. The oatmeal cake is only moderately sweet and has that oatmealy dryness.
