Beer and Tapas Help!

    Hey guys, can you all help me out with some pairings? I'm kind of stumped. I have to use my preexisting beer list, so please just give me some style tips, and not specific beers

    *Endive with bleu cheese mousse, Cajun pecans and grapes

    *Pinchos Morunos (Spanish pork skewers marinate in coriander, turmeric, paprika, and cinnamon

    *Shrimp fritters fried with parsley and scallions

    *Spicy Cajun crab Rangoon--crab, cream cheese, tomato, chiles, and cilantro in a fried wanton

    With the endive I would do a mixed ferment saison. Something a bit tart and funky, but not too crazy like a gueze or anything.
    Pinchos I would pair with an amber ale or Belgian dubbel. Fritters id go with witbier or like a fruitier modern pale ale or even a nice, tight German pils, and with the crab I'd do saison again, either mixed ferment or regular (non-tart saison).

    Spicy plays well with Pils, golden ales, saisons. Think light, crisp, and refreshing.

    Earthier flavors work with brown ales, quads, and even some sours

    Fried food goes with anything almost, but this is the chance to sneak in an IPA or two.
