I can't speak for the New Holland bourbon, but I recently tried Jameson Caskmates, and I was pleasantly surprised by how much stout flavor comes through in the whiskey. It adds a nice, subtle sweetness to it that makes for a very nice desert whiskey.

I like my Knob Creek Small barrel small batch just fine as it is, it doesn't need a thing except a few drops of ice water.

You sound like you know what you're talking about and all, but aren't both 40% abv? And if so, wouldn't that mean they have the same H20 content? Also, I think four roses yellow label (which is awesome for 20 dollars a bottle) doesn't taste much at all like Bulleit. Bulleit is kind of just ok. Good for mixing. I can sip yellow label or throw a drop of peach or plum bitters in my pour of yellow label and it is great.

I'm curious, what is meant by 90 degrees Bulleit?

    The degrees symbol means proof

To add a we bit more half of proof is the ABV, so the whiskey is 45% ABV.

That makes sense. I was thinking Bulleit for 40% but now i recall it is 90. I guess it's been a few years since I bought a bottle.

    Thanks.
