Beer Brining

    I brined then roasted a chicken yesterday. Came out absolutely delicious. Just thought I'd share one of my brine recipes with yall. I usually just do turkeys for thanksgiving. But since we eat so much damn chicken around here, I figure I'd play around with a new brine idea. Hope yall enjoy.

    Ingredients for Brine:
    1 whole chicken (3 to 4lbs)
    4-6 bottles of pale ale (I used Sierra Nevada)
    2 quarts of water (or 1 quart of water and 1 quart of ice reserved)
    1 orange, halved
    5 sage leaves
    5 bay leaves
    1 cup kosher salt
    1/2 cup sugar
    1 tbsp black pepper corns
    1 tsp coriander seeds
    couple sprigs of thyme

    Ingredients for Roasting:
    Kosher Salt and fresh ground black pepper
    fresh chopped thyme
    pinch or two of ground sage


    Brine for 12hours. When done, rinse and pat extremely dry. Add the rest of ingredients for roasting. Roast at 450 for about an hour or until internal temp of 164.

    Looks nice! Haven't brined anything in ages... Maybe this weekend!
