Beer deliberately bottled still

    A bottle of Cantillon Grand Cru Bruocsella at Avenue Pub in NOLA. On the upstairs balcony overlooking St. Charles Ave is one of my favorite memories. I know new owners have taken over recently, so I don't know how they have changed since, but man, that was a great beer on a great night.

    Probably not bottle conditioned, but I don't see why it couldn't be force carbonated. But then it'd need to be in a bottle with a cap/cork that can take carbonation pressure.

    This guy carbonates vodka with a soda stream

    That's an excellent question. Obviously, it calls for speculation, but my answer would be no. I don't think you'd want too much carbonation, but even for beers like Utopia and Xyauyu, a touch of carbonation would likely be a benefit. Might not improve the flavor much, but it might make the beer a bit less heavy on the palate.

    Reminds me of the ole Sam Adams Triple Bock.
    I loved that stuff. Still have 1 full bottle each of '94 & '95 I believe?
    It was such a unique beer at the time.
    It's a shame it didn't last.
    I'm not sure if I would enjoy a hoppy still barleywine though.
    The triple Bock drunk in a glass port pipe as an end o nighter during the cold months was a beautiful thing.

    Only beer i have had of this type was Hair of the Dog Putin and i didn't enjoy it at all ; due in part cuz if the lack of carb and their overall take on an IRS

    I always felt like SA did a poor job of marketing that beer. I first tried it at the 94 GABF, where they poured a small sample (for those interested) as they left the building. The version I tried at the GABF was terrific. However, I was unaware the beer was supposed to be still... I thought it had some light carbonation at the GABF.

    So when the bottles were released, I was completely surprised. I wasnt expecting the tiny bottle, single bottle format, nor the price (between $4 and $5 a pop - which was a huge amount back then). But the beer I had at the GABF was so intriguing and so good, I still bought 3 bottles.

    The next shock came when I opened a bottle. The cork was very loose in the bottle and the beer tasted flat. To say I was unimpressed would be an understatement. I was really pissed at the time. But it was so expensive, I didn't have the heart to dump my remaining bottles. I think I finally opened my last bottle 5 or 6 years later, only to get a final surprise. Turns out the beer had aged well (but was still flat of course) and tasted fantastic.

    None of what I experienced was something SA prepared me for. A bit more information and a bit more customer assistance would have made such a big difference with that beer (which I believe was something of a sales flop for SA). Ah well...

    The two that I've had (Cantillon Grand Cru Broussela and some OEC barleywine) would have probably suffered slightly from any more carbonation.

    The cantillon beer is a wonderfully vinous beer and I don't think it would be enhanced by the added bitterness of carbonation or by a thinning of the body. And the OEC beer seemed to be trying to emulate a port, so I don't know if it would have been more enjoyable to me with carbonation but I'm pretty sure it would have taken it away from the flavor/style the brewery was going for.

    It's definitely not a technique that lends itself to widespread adoption by the beer industry, but I think it's appropriate for a niche selection of styles.

    my first foray into it was 3 Candles from SP years ago and at the time i wasn’t a huge fan but as the years (and Candles) have gone by i have become more and more into it. part of that is my taking to port wine in those years and also just being more open minded. most recently, MJK was bottled still and is absolutely incredible. perhaps the barleywine style of beers is best suited to this non-carbonated treatment?

    I've had a few over the years, and can't recall what they were at the moment. Almost split for me. Some worked for me, some didn't. Maybe something I should revisit...

    I have had one that I recall. Monachus XII Eisbock from De Vier Monniken.
    It was a different kind of taste from a normal beer, more akin to a port or dessert wine, but it was still very tasty. I think I prefer carbonated over still just for the mouthfeel, but I also drink a lot of carbonated beverages for the same reason.

    A really good still beer may come close to being like a decent Port. After dinner I'd rather have Port than any still beer.

    Great thread, @DIM. I'm a big fan of still barleywines. I have had a few stouts that completely lack carbonation and they have varied in quality. I have had several still beers from Cantillon, including one they had on tap a few years ago. Of all of them, I'd say the latter is my least favorite. I love my lambic with carbonation.

    It’s definitely something I’ve seen becoming more popular. While I haven’t had many examples, I would love to see and try more beers bottled still.

    THAT SAID, my favorite beer of all time was a still beer… M.J.K from Side Project brewing is a 20% beast bottled still.

    For those unfamiliar, Side Project noted that as time has passed, three unique recipes for M.J.K. have been brewed and then aged for their first rest in Willett Family Estate barrels. These unique expressions allowed our ever-changing perception of what Barleywine is to be explored and revealed to you through our precise blending of double barrel-aged and triple barrel-aged Barleywine.

    Well yeah, who wouldn't, but a good tawny port or vintage port will set you back some serious change. Even good vintage character ports have gotten pretty spendy of late.

    I still have a first edition Utopias that's about 1/3 full. Ditto with a 10-year anniversary bottle.
    Both taste more or less just like they did when I first opened them.
    I don't really like port character in most beers (or port at all for that matter), but I honestly do kinda like Utopias. I think all of the zany blending has done it some favors with complimentary flavors.
