Beer Flavoring issues

    I was going to guess that, too, until I saw that one beer was fermented with SF-05, which has to get pretty darn hot before it's going to throw any esters.

    I would also tend to discount infection, since the most recent beer apparently has the same off flavor as his first batch. If they were both infected, the first batch would taste significantly different by now. And probably be super carbonated.

    My guess is the OP might be a victim of stale LME, which could give both beers a similar "homebrew tang." I would try brewing the next batch with DME and see if that has an impact.

    I think fermentation off flavors (yeast) are the culprit. If he's fermenting at an ambient temperature of 72F then inside the fermenter he's getting anywhere from 76-80F which is way above US-05's threshold.

    OP, my suggestion is to get a source of temperature control, whether it be a swamp cooler or fridge or something.

    Feedback and learning are pretty critical to improving your methods (and you beer). I post everything about every beer I brew online. Here's an example of what I post. Everyone and anyone can critique, criticize, or praise my beers. I also have a guy I talk to who's a real pro, a long time certified judge, and is willing to honestly critique my beers. I've even shipped him beer before. I often post recipes in advance of brewing, getting feedback. You've gotta interact with brewers who are better than you in order to improve your beer. You've also gotta keep good notes and records of your methods and ingredients. No detail is too small for you to consider for future batches. However, if I have discovered anything, it's that you just gotta do it, fix the problems that come up, and do it again. And RDWHAHB.

    Yeah the attention to detail is so important in the brewing game and its one of the major things that separate a mediocre beer from a great beer. This website has been so helpful for troubleshooting the issues that may seem mundane to an everyday onlooker.
