Beer / Food pairing

    Did a quick search and hadn't seen anything in the forum, figured it would be useful to get a running list going.

    Any preferences or necessities you have of beverages when having specific foods? BBQ, seafood, Thai, Indian or any other style? I've got a buddy doing a brisket for tomorrow's Breaking Bad and was looking to bring the beverages but was not sure what to pull from the closet.

    The two Texas beers I have had that seems to pair with any style of food is Rodeo Clown, and Saint Arnold BB 2. Both go great with a steak or seafood. BB 2 pairs well with a variety of pasta dishes, which is a food style that I find really hard to pair beer with.

    Just had Zoe with some tacos that worked well. Weisse Versa can be used to make great beer brats or beer bread. Lets see, what else? Fresh Sisyphus goes good with a number of spicy foods, or sharp/strong cheeses.

    Edit: To go with brisket, I can see going with something else smoky to pair with that. Or, I always like a crisp clean darkish lager. Like Stone Smoked Porter or Full Sail Session Black.

    If you go to the beer section of BA and click on styles, there will be notes in the side bar about food pairing, cellaring and serving temp, and glassware.

    I helped planned the drinks and food for a small wine, beer and cheese event. I think BSDAs and dubbels go great with tangy cheese like havarti IIRC. That was my favorite pairing at the event.

    I recently found a preference for hoppy beers with spicy food. As for a brisket, a native Texan BA should know better :wink: Perhaps a German ale, DIPA, or a sour ale, like a Jester King beer.

    Great advice, I do remember seeing the pairing reference now that you mention it. A native Texan I am not - just another Yankee from Massachusetts, though I did just have my 6 year anniversary in Austin.

    Ah right, I wasn't say you were a native. I was inviting native Texans to add their input. I'm a Californian myself. Just traveled to Boston and NYC and had a great vacation. Nice to be by a real beach again.

    Of the 3 C's (complement, cut, contrast), I like complement with BBQ, so preferably something smokey. Gotlandsdricka or a rauchbier would pair well in that regard. Most stouts will also do well.

    The BA pairing tool is pretty good as well.

    For other pairings I especially like:
    • stouts with chocolates
    • sours/lambics or belgian darks with rich stews (and IN stews)
    • hoppy beers with spicy food
