I've been kicking around the idea of making some homemade beef jerky. Basically, marinade the meat overnight then smoke it at a very low temp for 6-8 hours to dry it out. I'd like to use some beer in the marinade and was wondering if anyone has tried this and had success with it before. Thinking along the lines of a stout or rauchbier. Thanks!
I've done it with a few different beers and always had good results. I think you could use just about any beer and it would taste good. Last batch I made was with Lindeman's framboise, finished product had a nice fruity/spicy/smoky taste to it
i have to think that smoking and drying is going to eliminate any beer character. but since i have never done it i can't be sure. my guess would be to go with as bold a beer flavor as you can and the lightest smoke available. just spit balling. sounds like a good project, so let us know. Cheers.
