This sounds awesome..... I just ordered one and it will be here on Xmas Eve... the first thing that's going into it is Prairie Bomb!

To be clear the OP is not "nitro(gen)" infusing this beer, rather he in fact using nitrous oxide (laughing gas, whippets, etc). So let the giggles ensue.

Interesting Idea, But a few things that I think should be pointed out.

    1. Nitrogen doesn't dissolve in beer, ever. The reason people (or breweries) use nitrogen in G-mix is to push the beer without having too much Co2 in solution. Actually a lot of bars will use a Nitrogen/co2 mix if they have long lines, you just never know because the beer has the right amount of Co2.

    2. The secret with G-gas and the creaminess, is in the tap handle, if you take it apart, there is a disk with very tiny holes, when the beer gets pushed through the holes, it takes the Co2 out of solution and makes a creamy feel.

This seems to have a similar effect, looking at the diagram, the creamer is really pushing the beer through a very tiny hole

I'm a bit of a tinkerer so I thought that I would give it a shot, hopped on Amazon and ordered the whipped cream dispenser...(http://www.amazon.com/gp/product/B0021AEBCU/ref=oh_details_o05_s00_i00?ie=UTF8&psc=1) Figured if it didn't work my wife would use it for making cakes and such.
It arrived on Xmas Eve, great timing because I was thirsty.
So I decided to use Breckenridge 72 Imperial Chocolate Cream Stout mainly because I had it laying around and if it was a disaster I wouldn't be upset.

    1. poured it into a glass to get a before picture and a quick taste
    2. poured it into the canister and charged it with the Nitro cartridge
    3. held it upside down and with a pint glass in the sink (being cautious that this could be a total disaster.)
    4. sprayed the beer into the glass pretty successfully and watched the beer settle from a creamy foam. Much like Guinness does when from a tap or can.
    5. Poured into my mouth. Really changes the mouth feel of the beer. Much more creamy and the bubbles are noticeably smaller. I would say a very Guinness mouth feel. I actually enjoyed this beer more like this than straight from the bottle. You can see from the pictures that the line the head creates is a much straighter line when poured from the creamer.

The negative of this process is it does take a bit of time for the beer to settle. To me that wasn't a big deal because I don't like stouts to be super cold. The last negative is that you probably lose about 10% of the beer during the process. So I would only recommend using a beer that you are OK missing out on that 10%. Last night i tried this technique with a Founders Breakfast Stout with just as good of results. I will continue to try this withe beers i have a plentiful supply of but this is more of a once in a while thing due to the loss of beer during the process and having to have the nitro cartridges laying around.
I would definitely say give it shot its a fun way to change up your beer drinking at home. If you have any questions about it feel free to hit me up and I will try to help out.

I attached some pictures of the process to give a visual aid.

Did you continue with your experimentation? I'm curious whether you actually found nitro (N2) cartridges that work with the dispenser rather than the nitrous cartridges (N2O) that are typically used with cream whippers. I found 1.8G and 18G N2 cartridges on MoreBeer but I'm not sure if they're compatible with the cream whippers - emailed them to ask but I have no idea if they'll know.

This is intriguing... I am a huge fan of nitro's and have a few homebrew stouts that I would love to try this with...

I assume the gas tanks are single use? Really tempting...

Williams brewing has some nitrogen carriages ( not sure if they are compatable)
