Beer paring

    As if we haven't had enough of beer with this and beer with that, here's something else to discuss and beat to death. What beer styles are compatible? Or better yet, if you are going to drink several styles of beer, which style is best to have first, second, last, etc. and which styles should not be mixed with any others. My first thought is that a DIPA should not be the first on the list if you are going to have another style or a single IPA.

    As a general rule, if you're drinking any sort of flight, you should be loosely going from light to dark, low ABV to high, least hoppy to most hoppy, in some makeshift way, to ensure there is a progression for your palate and it doesn't get blown out by the strong stuff too early on.

    That being said, one of the glorious things about beer is carbonation. It does a great job of scrubbing the palate clean, so it's much easier to mix and match beers than other food and drink.

    currently my favorite sequence is

    Saison ===> Dipa ===> Dipa ====> something big, barrel aged, strong and sweet

    Definitely a good rule to not have an ipa after an iipa. Most people would probably end with a big stout.

    I like to start sour and then go bitter with iipa.
