Beer Storage

    I am new to storing beer, so I have a few questions. I bought a Bear Republic Big Bear Black Stout a few months back. I wanted to wait a while until I drank it. I initially put it in the fridge, should I have not done that? Also, if already been in the fridge for a while, can I take it out and store it elsewhere without ruining the beer? Lastly, how long should I wait to drink this? How does any of this apply to barleywine as well? Thanks!

    Fridge is great, can take it out and store it elsewhere fine, drink it when you feel like it, and same applies for barleywines. Seems like this beer has characteristics that wouldn't really benefit from aging, so I'd drink it sooner rather than later (especially if you've never had it). Keep it in the fridge to slow down any aging.

    Putting it in the fridge will slow down or stop the yeast from finishing off the residual sugars (if pressent), taking it back out of the fridge will wake the yeast back up; how long to age it? That depends upon what aspects if any you want muted in the flavor profile.

    I don't know if I'd age Big Bear myself, but I'm fairly certain a year old BB would have less "pop" in its flavors. If you want to get into the whole cellaring thing (seriously don't, we're all trapped here and people keep coming and joining us miserable bastards that constantly seek out cellar additions and watch and wonder over our clutch of aging alcoholic beverages), then keep watching this forum and reading the cellar review threads to get ideas of what works and what doesn't.
