I made two beers a few weeks, ago. The first one was an NEIPA, it spent 3 weeks in the primary and then I racked it into a keg. It has been at 36 degrees the past week slowly carbonating . Today I took a sample just to taste it and it taste really green, almost like a bell pepper taste. How long do you guys keg condition usually before you start drinking it. I know when you prime in a bottle, you have to keep the bottles at room temp for a few weeks, is that the same with kegs? I also made a pale ale, two weeks in the primary, and it has been slowly carbonating for a week, and it to has a vegetal taste. Thanks in advance.
It really depends on the beer. A lager that has been in secondary for over a month will taste good as soon as it is carbonated, which may be in a few days. An ale that was rushed through primary will need a week or two in the keg to round out most of the time, with the exception of low gravity ales, like bitters, which can sometimes go brew day to glass in 10 days.
A vegetal flavor could be from Di-Methyl Sulfide (DMS) as described in this link from John Palmer's book How to Brew. http://howtobrew.com/book/section-4/is-my-beer-ruined/common-off-flavors Or, if the taste is closer to freshly cut pumpkins, see the info in the same link on Acetaldehyde.
I suspect that the flavor that is being described as "vegetal" is due to the beer still being 'green' and after some additional conditioning time it will dissipate. @sooners3210, please report back in another 1-2 weeks how your beer tastes. Cheers!
I don`t understand what you mean here. Did you prime your beer with sugar or are you force carbonating it?.Beer won`t carbonate at 36 F if using sugar.
