It's damn near morel season here in MN. Just curious if anybody had suggestions on beer and morel pairings.
Beer and umami can be a tough pairing; I'd like to hear some ideas myself. My initial thoughts lean toward darkish Belgian ales and roasty stouts.
I usually prepare morels by themselves with some butter. I wonder if I treat them like a steak and pair a nice earthy EPA? The right stout could be sublime though. It would have to be just right and not too over powering.
Morels are very earthy. Try pairing with a heavy stout or porter. The coffee and chocolate in the stout will really accentuate the morel's earthy nature. This will still work with cheese and crab stuffed morels baked at 325deg F for 15mins.
Curious about this too. My initial reaction is quad, but I can see how a roasty stout would also be good.
Found around 75 morels this Friday and sunday combined. Friday I made T-bone steaks with sautéed morels and had Clownshoes Billionaire with it. FANTASTIC!! Sunday I made homemade Steak and cheese subs with Morels and onions with DFH 120 min(fresh) Was great!
Longtime picker, in fact more folks know me as a shroomer than a fine beer lover. My favorite is: Take 2 lb. morels, 1/2 lb. bacon. Cut bacon small, cook in skillet on high till fully cooked. Add quartered morels to bacon in skillet. Cook until liquid in pan turns clear. Eat as is, or add to grilled cheese sandwich. A good smoked porter or milk stout with this is heaven on earth, man.
Yep, prob 8 of his brothers inside. Those were fresh in, and they were set aside to be stuffed. Yumm. Prob a nice light beer like a Koelsch to pair with stuffed morels.
