Beers That Evolve Over Time

    I've found some beers seem to evolve over time in a glass or decanter. I like to do this mainly with RIS and BA RIS where I don't mind losing the carbonation. If you want to see what I'm talking about get 2 bottles of the same beer and pour one in a decanter or your glass if you don't have one, leave it for a few hours then taste alongside a freshly opened one. To me it seems to bring out more of the more subtle notes of the beer.

    My reccomendation don't try this with DIPA, I tried it with Heady and wouldn't reccomend it.

    What beers do you think evolve or change the most overtime in your glass or an opened bottle. Have you ever tried this if so tell us what beer you did and how it changed and how long you left it. I'm very interested in seeing if anyone liked it better after 24 hours.

    I did Dragons Milk and BCBS. I thought both were better after about 2-3 hours than fresh I seemed to get more Vanilla and coconut notes along with cherry and some red fruit notes I didn't get before.

    FBS changes a lot in taste as it warms. For me, it hits a sweet spot after about 15 minutes in the glass.

    Malt forward beers seem to all develop well as they warm up, especially higher abv ones, IMO. Same with well constructed wild ales.

    Not sure about decanters (and I seem to be an anomaly on this)- but at least 90% of the time that I put a bottle stopper on a bomber to finish later, I enjoy it more the second time around. I enjoy the softer carbonation and smoother feel and I'm not sure what it is but I also often find that it just tastes better to me.

    Sofie is the beer that opens up the most for me. My last sip is always the best.

    Founders Curmudgeon is so much better with 2-3 yrs of age on it! I also like to let this beer sit for a while after pouring, i usually order a curmudgeon and another beer at the same time, i enjoy the other beer first and drink the curmudgeon afterwards about 30min give or take. I do this with KBS and Parabola as well.

    This is also why I've really come to enjoy cask beer. Lower carbonation and warmer serving temp = a more flavorful experience to me.

    I have a bottle of 1994 vintage Sam Adams Triple Bock sitting in my "cellar" back in NY. My dad purchased four of them back in 1994, drank two within the first 10 years and drank the last one in 2010. He said it was best around 2004/2005 when he had his second. I plan on trying it sometime soon.

    Yeah, the beers that are recommended to be served at a higher temperature to begin with: Belgian Strong Dark Ales, English Barleywine, English Porter, Imperial Stouts, Doppelbock, Eisbock, etc.

    Hmmmm, maybe that's why I think KBS is overrated will have to try and get my hands on one and try this.

    Stone's 17th Anniversary Gottermadung (whatever) actually improved substantially as it warmed. Cd it had a funny finish. But when on the warm side it was a huge pineapple explosion and soooo good. Only IPA I think I would recommend drinking on the warmer side.

    Man, Ive always wanted to try aging a beer for a year or more. Shit, it would be nice to age one for 6 months. No beer that I buy ever makes it more than a week. You guys have inspired me. I want to purchase some Bells Expedition Stout and age it a year or more. Wish me luck with my patience!

    Goose Island Night Stalker ages very nicely and then let sit in the glass for 20-30 min. Solid.

    Dogfish Head Fort is undrinkable fresh IMO. Way too much booze and syrupy sweetness. However if you age it for 4+ years it becomes one of the best fruit beers I've ever had. So good.

    Hmm, I'm going to try this with a local tannin-heavy sour, Driftwood Lustrum.

    Hmm, well it was at a tasting with a DFH rep during the original Bitches Brew release in 2010. The bottle he shared was 4 years old so it was a 2006. But I've aged many since and it really does the beer good.
