    Haha, I really don't feel bad for your FL winters. When you say metallic, is it in the flavor as well? I wonder if it has something to do with the peppery phenols produced at higher ferment temps. I'll be dry-hopping with 1 oz each of Centennial, Amarillo and Simcoe. Should be 7.2% if the AA is around 80%. I'll report back on the aroma in a few weeks after I get this one in the keg.

    Somewhat . . . maybe more clove oriented, and it's muted with time. When I drank it blind with an original La Chouffe I picked my brew, so can't really call it a flaw. Pretty sure this was because of the mid-70 ferm temp early on.

    Something to consider: dh'ing with Cen/Ama/Sim is normally a killer combination, those are some of my favorites in an American IPA. But considering the yeast esters should also shine, maybe this is a time for only two dry hops (or one?). Example: Duvel Tripel-Hopped finishes with Mosiac only . . . Houblon Chouffe uses Amarillo as the dh. Don't let me talk you out of your hops . . . but give it some thought.

    Somewhat related: At a recent competition, the IPA judges at another table passed around a Belgian IPA that finished with Mosiac/Simcoe. It was a killer . . . aroma was swimming with two great hops and wonderful Belgian yeast easters. Then the body was a great Belgian Strong Ale, carb level was high with a great head, minimal alcohol warming . . . bordered on being a perfect beer.

    Good to know, thanks. The BIPA that I brewed was based off of clown shoes' tramp stamp (similar grain bill and same hop schedule), but I decided on 3522 over the suggested Chambly yeast. Dry hops are already blended in a container so I'm just going with that combo this time around.. May consider a new dh schedule for the next batch if I feel this is too much. Boil additions were Columbus for bittering, then another oz each of simcoe/Amarillo/centennial at FO, along with some sweet orange peel. Should be around 70 ibu, but I'm hoping the 3522 will still have room to shine.
