So I'm thinking about doing a Belgian pale and using all citra hops and throwing in cab sav aged oak cubes. Thoughts?
I've enjoyed lots of Belgian pales, used Citra a lot (love it), but wouldn't recognize a cab sav oak cube if one was to hit me in the head. You might be asking a Belgian yeast strain to take on too much with all of this going on. That said, I love breaking the rules and experimenting. Maybe a split batch?
Agreed with Mr. Largo. Belgian yeast + citra + cab oak might be a bit much. What yeast strain and grain bill did you have in mind?
I'd say this is a classic overextension for you. But I'm sure it will be awesomeness and we will all be wishing we were you. Again.
Add some Brett and you're getting close to this. http://www.beeradvocate.com/beer/profile/13307/58359/
Shit, just realized you're the "throw a whole pumpkin pie it in it" guy. Yeah, by all means, Belgian pale + citra + cab sav aged oak cubes = awesomeness.
