Me and a couple if buddies brewed a quad and bottled it. We used our usual priming solution of one cup sugar and two cups water. We let it sit at room temp as usual, but there wasn't any carbonation after three weeks. Any suggestions on what went wrong?
My quad (ABV ~10%) took over 3 months to carbonate well, and that was with reyeasting with US-05! High ABV beers take a long time to carbonate as the yeast is (generally) old and stressed.
I hear flipping the bottles every couple days and rotating from upright to upsidedown will help speed things up. I have had trouble carbing high abv beers before too. What is the temp btw? You may want to try bringing them to at least 68 to70 degrees! Good luck and cheers!
We've had the bottles at room temp which is roughly 70F and still nothing after a month. One of us has tried flipping them and hasn't tried them yet. I think we'll try reyeasting in the future if we do this recipe again. Thanks for the advice guys. Prost!
Definitely use champagne yeast in my opinion! It will eat the hell out of the simple priming sugars and can live in the harsh environment of a huge beer!
I just tried a bottle of my BSDA after rousing a couple weeks ago, it was better than before but still weak on the carbonation, I even pitched yeast when I bottled, Champagne yeast it is from here on out for high abv beers. I have a few 12% batches, only one of which has carbed right now, and I made a starter to bottle that one.
