Belgian Tripel and Dubbel

    What's the difference between a Tripel and Dubbel? Also, how long should they age/condition before drinking?

    A Tripel is light colored; mostly Pilsner malt but some light colored candi sugar (I would recommend table sugar for homebrewing). It is of higher gravity (higher ABV).

    A Dubbel is darker colored (amber-ish). Mostly Pilsner Malt bit some specialty malts like Special B and Caravienne or Caramunich but also some sugars (I would recommend table sugar for homebrewing). It is lower in gravity (ABV) than a Tripel.

    The ‘key’ to making either a Tripel or a Dubbel is making proper yeast selection. I would highly recommend the Westmalle yeast (Wyeast 3787) but you should pick the yeast strain that you prefer (make sure it is a liquid yeast strain and make a starter).
