Belgian Winter Ale

    So I received the wrong yeast, it’s this: https://www.craftcultures.com/blank-rwrlr/ccyl129-eagle-river-ale-yeast
    So it’s a Belgian strain. I wasn’t planning on this strain, but I don’t want it to go to waste and now I’m scrambling to decide what to make with it. I’m leaning towards some sort of Belgian holiday/ winter ale. Probably darkish with Special B, maybe some spices (ginger?), maybe kettle souring or Brett? Just wondering if anybody has made anything along these lines and liked it. Thanks.

    Personally, I'd just make a Quad with some D90 (and possibly Special B as well) and call it a day, but some light spicing could make it interesting.

    Since it's POF+, I'd say away from the Brett addition unless you REALLY like phenolics in your beer.

    I find Belgian holiday/winter ale's are good year round. If interested in spices, here's a good starting point:
