I brewed a white IPA yesterday. Pitched around 3:30 p.m. and had activity within like 3 hours. It didn't seem to have a lag phase. I don't remember it ever doing this. I used it probably about 3 years ago maybe? Didn't see anything in my notes. Activity, I mean nuts. I've read posts where they don't do anything for a while. Slow starters and such. I think I've ever had a yeast take off like this before. Almost like overpitching but that's impossible. Within 6 hours it looked like there was straight up sourdough starter everywhere. Gobs of snot...Cakes of it on the top. Pieces like the size of a Snickers bar. It's not even close to forming full krausen . Looks just like CO2 from replication. At this point it might hit my dry hop charges I have on the magnets up at the very top of the carboy! It's just going bonkers right now. This is common? Did I just get a great one? LOL It's bubbling away like it's been in there for 48 hours or more. Might have to get a blow tube ready. Honestly don't think anything's ever taken off like this in all my years. Although I do know this is the first Belgian strain I've ever done a starter for. It's going to be one hell of a ride
